katsuji Tanabe is a guy of L.A’s unofficial mascot,he is a chef with his handwork and meditation towards his work he has named in his name in the five different food Television shows,He says even though i am not a jewish but i wish to run an to kosher restaurants,even there are many more chefs in L.A who are in a competition with Tanabe but no one could defeat his affects towards his goals,he has unique perspective on the American dream.He knows how he can fill the satifications of one’s need and taste. Katsuji tells us that he moved to Mexico in the age of 18 so that he could live a healthy life with him his mother and sister also came in the year 1999.He also said that when they came they had $5 in there pocket.Anyhow they managed to stay in a rented apartment which had one bedroom and was situated in Eagle rock.
With this he says that there were not really restaurants but some taco places where he would go working like 12-hours shifts, where he had to wash dishes in a Chinese restaurant.Education for him was really necessary for one to learn new things when went to culinary school he already had an experience of working in restaurants almost for 10 years.He says that knew how to make bechamel but i didn’t know that it was named as bechamel. So i just wanted to increase my knowledge about the cuisines.He knew that that would only be done when he completes his education from some culinary school.Before coming to culinary schools i had work experience with a lot of fine-dining restaurants,French,Italian restaurants in Maxico. Also with big companies.I always Believed to start from very ground level which was washing of dishes.If one needs to become a good man with a good post i guess all you have to do is understand the concept of your work from the level zero.
i use to work sometimes for 24 hours without any worry i use to get so involved in my work that it use to be difficult for me to sometime leave for my home.I use to cut garlic and onions and it was awful.When i started moving to Italian restaurants, I would smell like fish in the end of day ,because i would clean and squeeze calamari for literally 10 hours. After my culinary school i decided ending up super fine -dinning restaurants .I became Chef and because i was so immature and couldn’t handled things in a right manner i doped the idea working in that job.so now i i didn’t have any job left with me ,i started to take heavy drinks because i wasn’t at all happy with the things which were happening around me. Out of nowhere he says that i get a call and they ask if he could work as a chef for there show.They had already seen him on the PBS which was a cooking show.
For me it was to compete and be on TOP CHEF and i am completely happy for it.I am proud of myself that i worked so hard and today whole country is proud of me. It really feels great when you are called as the CELEBRITY CHEF .
